I ♥ beets

I really love beets. I have always liked them and especially loved them during my pregnancy with Adelaide... I guess you could say I craved them. On one occasion I bought a large bunch of beets from a local farmers market and proceeded to make a salad using the beets, beet greens and goat cheese... then later I finished them off by making a large beet smoothie. I made one for Jessica too, which she found repulsive (even though she too is a beet lover), so I ended up drinking both of them. Delicious! The next day I was very worried when I noticed that my urine had a pinkish reddish tint (this is NOT a good sign while pregnant)... but before I freaked out too much, I recalled my beet obsession from the day before and put two and two together.

I feel like not that many people like beets... Often when I mention that I like this particular delicious candy-tasting vegetable people respond to me with disgusted looks. I'm guessing they haven't tried beets in all its wondrous forms. Here are a couple ways I have either tried or plan to try beets in the near future (I just bought another large batch of beets):

Adelaide is always so happy when Rick plays her the guitar... he is playing it right now and she shows her enthusiasm by attempting to sing along in baby babble and letting out super excited (and loud) squeals. She will grow up loving Guns N' Roses, Led Zeppelin and the Beatles.

Adelaide also likes playing Rock-band with her Daddy.

Pregnant Cuteness

I want to be pregnant again, just so I have an excuse to get this shirt. So cute. And of course another baby would be fun too.

Scattergories

Last night we played Scattergories with our friends Ruthie and Brad from down the hall while our sick children played together.

The game was actually quite thrilling... Brad thought of very unique answers and was ahead the entire game, I was doing pretty good too until Rick and Ruthie joined political forces against me and started voting down all my creative answers. Ruthie was very fast and could fill up her whole sheet before the timer went off and play with the little ones in between. Rick was hands down the funniest player though... The first round was for "R" and while his top word started with an 'R' the rest of his list started with 'B's?!? We were nice and deemed it a 'practice round.'

Perhaps my favorite part of the whole game was when we had to think of a college major that started with 'B'... Ruthie thought of biology, Brad thought of biopsychology, and I thought of biochemistry. Poor Rick couldn't think of a college major that started with 'B' even though he is currently getting his Masters in Business. haha, we love you Rick!

In the end Brad won, Ruthie and Rick tied for second, and I lost. I call a rematch.

Next Years Halloween Costume?

Lately Rick has been sporting a 'stache, but as a Valentine's Day gift he shaved it off for me. Before doing so though I really wanted to get a picture of him looking like Tom Selleck (who is pretty much his hero and star of his favorite TV show Magnum P.I.) Maybe he can grow out his mustache again next year for Halloween?

side note: Rick was going to shave off his mustache a couple weeks ago, but thanks to my brother Kevin, who thought it would be a great idea to send Rick a Detroit Tigers hat, Rick just had to keep the 'stache a little longer. Thanks a lot Kev!

Happy Valentine's Day!

To start off this special Valentine's morning Rick and I had some delicious pecan sticky buns that I made using a recipe from Martha Stewart's Everyday Food Magazine... they were delicious and easy and I highly recommend them.

Our Valentine's gifts to each other were rather low key this year, but still fun. Rick made me a bouquet of lollipops and wrote on the pot "Emily, You are like a Pot of Flowers." hahaha that really cracked me up for some reason. And then on each of the flowers he wrote things he loves about me, that are also things you could love about flowers? very cute.

I wrote reasons why I love him on some Taffys. One example:

Crawling...

Backwards!

Adelaide is trying ever so hard lately to learn how to crawl... she gets on her hands and knees and really wants to move forward, but instead she scoots backwards. She is making the most of this new skill and can crawl backwards great distances. I caught her the other day halfway tucked underneath the chair in her room.

Dainty Toes

I've been wanting to paint Adelaide's little toenails pretty much since the day she was born but everyone discouraged me. They told me that she would put her foot in her mouth and eat the polish which would obviously not be good for her. I always heeded their wisdom until recently when I realized that for whatever reason Adelaide is not capable of sucking on her toes (either she is too chunky or just very inflexible). So yesterday I painted them bright pink. cute huh!?

Hello Goodbye

My sister-in-law Megan has been making her own almond milk lately and I was inspired to try it myself. So I bought a bunch of almonds and soaked them for a day and turned them into a beautiful batch of almond milk using a recipe I found online. Once I finished my liquid masterpiece I was really excited and used it in a couple recipes and simply drank it plain. When Rick got home from his long day at school I exclaimed that he just had to try it... it was so good. He wasn't nearly as excited as I was, but he gave it a shot anyways. Within minutes he was coughing and explaining to me that his throat was closing up... his face was also turning quite red. I guess Rick is allergic to almonds.

Farewell almond milk... we had a good run.
